Betty Atwood's Peanut Brittle

  • 2 cups water
  • 1 cup white corn syrup
  • 1 stick margerine
  • 2 teaspoons soda
  • 3 cups peanuts

Place margerine, syrup, and sugar into heavy skiller & boil till forms hard ball in cold water. It should be light brown color, but not burned. Remove from heat & quickly stir in peanuts & soda. Pour onto buttered cookie sheets & stretch thin with forks (very hot) then let cool to harden. Crack with spoon and place in plastic bags to send to Greg!

This makes a big batch -- it is also Granddad Lemons' favorite. I like the little red salted peanuts better.
